Ingredients For the Pumpkin Bread Crust:

2 eggs

1 1/2 cups of sugar

2 heaping Tablespoons of brown sugar

2 1/4 cups of flour

1 teaspoon of baking powder

1 teaspoon of baking soda

1 teaspoon of Cinnamon

1/2 teaspoon of allspice

1/2 teaspoon of salt

1 Tablespoon of Orange zest

1 1/2 cups of canned pumpkin

1/2 cup of oil (or melted butter)

1/3 cup of heavy cream

1 teaspoon of vanilla
OPTIONAL –

1/2 cup of chopped nuts

1/2 cup of golden raisins

Ingredients for the Cheesecake:

5 – 8 ounce packages of cream cheese – softened

3/4 cup of heavy cream

1 Tablespoon of Vanilla

2 – 3 cups of powdered sugar

Pinch of salt

Here is how to make it:

1.In a large mixing bowl, add the eggs, and the sugar, and cream together until light and fluffy. Add the brown sugar, orange zest, canned pumpkin, oil, and vanilla and blend well.

2. In the middle/on top of the pumpkin/egg mixture, add the flour baking powder, baking soda, cinnamon, allspice and salt. Blend the dry ingredients together right on top of the pumpkin mixture, and then blend the flour and spices into the pumpkin mixture until well blended. Add nuts and raisins at this time, if desired and blend into the batter. Set mixture aside.

3. Place parchment paper in the bottom of a 9 inch Spring-form pan. Fill the bottom of the pan with the batter, about an inch deep. Butter the bottom and sides of a loaf pan, and flour the pan, and tap out any excess flour. Pour the remaining batter in the loaf pan. Place the Spring-form pan, and the loaf pain in the oven at 350 degrees for 45-55 minutes, or until a toothpick inserted in the center comes out clean. (The Spring-form pan may be done before the loaf pan, so watch them closely). Once the pumpkin bread crust is done (and the loaf) remove from oven to a wire rack to cool.

4. While the crust is cooling, make the cheesecake filling. In the mixing bowl of a standing mixer, place the 5 packages of softened cream cheese, and about 1/2 of the heavy cream, and blend until smooth, stopping the mixer to scrape down the sides of the bowl, and blending until creamy.

5. Add the vanilla, and pinch of salt, and blend well. Add the powdered sugar, a little at a time with a little of the cream, alternating between additions, and blending well between additions. Blend until all ingredients are smooth and creamy. Place the mixing bowl with the cheesecake filling in the refrigerator.

6. When the crust is cool, remove the cheesecake filling from the refrigerator, and pour into the Spring-form pan on top of the bumpkin bread crust, smoothing the cheesecake with a spatula.

7. Place the cheesecake in the freezer, and allow to chill and set overnight. When ready to serve, crumble the pumpkin bread from the loaf pan on top of the cheesecake, and then remove the outside of the Spring-form pan.Cut in pieces, and serve immediately.

Ingredients for the Strawberry Brownie:

½ c butter (melt) OR ¼ cup + 2 Tbsp light olive oil

1 cup sugar

2 eggs

1 tsp vanilla

1/3 cup cocoa powder

½ cup flour

¼ tsp salt

¼ tsp baking powder

A pinch of cinnamon

1 1/2 cups of sliced strawberries

1 1/2 cup chocolate chips

6 Tbsp whole cream

Directions:

Preheat your oven to 350 degrees Fahrenheit. While the oven is heating up grease an 8 x 8 pan with some butter.

Add the melted butter, sugar, eggs and vanilla into a mixing bowl and mix.

Add in the cocoa, flour, pinch of cinnamon, salt and baking powder to the mixing bowl and blend. Be careful not to offer mix.

Spread the brownie batter in the pan and place in the oven to cook for 20-25 minutes. Test to see if it is done by placing a toothpick in the center. If your toothpick pulls out clean your brownie is done.

Remove brownie from oven.

Slice enough strawberries to cover the top of the brownies.

Set brownie pan with sliced strawberries to the side.

Melt chocolate chips in a small cooking pan with whole cream over low heat until fully melted. This should take about 5 minutes.

Spread chocolate mixture over strawberries on the brownie and chill in the refrigerator for 30 minutes.

Remove Strawberry Brownie from refrigerator and cut and serve. Enjoy!

I have the cutest Spring Bunny Bottom Sugar Cookies you will ever eat! Who doesn’t love the thought of a fluffy, soft, oh-so-cute bunny butt! I know it sounds like I have a problem…well maybe I am slightly obsessed BUT after these cookies touch your lips you will be hopping for more! Who’s ready for cuteness overload with a spread of sugar on top? This recipe was originally shared at Your Modern Family.

I love baking with my kids during the holidays. This was a project my kids had so much fun with! Every bunny tail offered a giggle with placement and a nibble when they thought I wasn’t looking. I hope your family will enjoy these as much as mine did.

Cookie Ingredients from All Recipes

2 3/4 cups all purpose flour

1 teaspoon baking soda

1 1/4 cup butter

2 cups white sugar

2 eggs

2 teaspoons vanilla extract

Buttercream Frosting Ingredients from Meaningful Mama

1 cup butter (room temperature)

1 cup unsalted butter (room temperature)

2 lbs powdered sugar, or about 8 cups (sifted for best results)

1/2 teaspoon salt

2 teaspoons vanilla extract

6 oz heavy whipping cream

Cookie Directions

Preheat oven to 350 degrees Fahrenheit. Stir together flour, baking soda and salt in a mixing bowl. Set aside.

Cream together the butter and 2 cups of sugar in a medium mixing bowl, until light and fluffy. Beat in eggs 1 at a time then vanilla. Stir in the dry ingredients until just blended. Roll the dough out flat and use a circular cookie cutter to form your cookies.

For the bunny feet roll out almond size balls of dough flat to form the ovals needs.

Place cookies 1 inches apart onto ungreased cookie sheets.

Bake for 8-10 minutes until lightly browned on edges. Allow cookies and bunny feet to cool on a cooling rack before frosting.

Best Buttercream Frosting Directions

In a mixing bowl, cream shortening and butter until fluffy. Add sugar, one cup at a time, mixing a bit between each addition. When adding sugar, you will want to start the mixer slowly. Continue creaming until well blended.

Add salt, vanilla, and 6 ounces whipping cream. Blend on low speed until moistened. Beat at high speed until frosting is fluffy, 1-2 minutes.

For coloring, I used a few drops of my chosen food dye colors.

To assemble these Spring Bunny Bottom Sugar Cookies, frost your cookie then place the bunny feet on top as pictured. You may need to add a small spread of frosting on the bottom of the bunny feet to better attach them to the cookie. Use ready made frosting pens, you can find in the baking isle, to decorate to toes. Lastly, add a small marshmallow between the feet, as pictured below, to make your bunny backside as cute as possible!

Here is what you will need! Get your Instant Pot by clicking here!

Instant Pot Peach Cobbler Ingredients:

2 (21 oz) small cans of peach pie filling

1/2 cup water

1 cup cake flour

3/4 cup brown sugar

1 egg

1/3 cup milk

6 tsp butter

2 tsp brown sugar on top

1/4 tsp cinnamon

pinch of salt

1 tsp vanilla

2 tsp baking powder

3 Tbsp oats

whipping cream or ice cream

First, place peach pie filling in a small Pyrex circular bake-ware about 8″wide. Make sure it fits inside your instant pot canister.

** Fold a piece of tin foil into a long strip of foil that will go underneath the bake-ware dish and be long enough to hold onto either side when you place this dish inside the Instant Pot. This allows you to place the dish inside of the pot and allows you to have created “handles” to pull out the dish once it is done with out burning yourself on a hot dish. Also cover your dish with tinfoil to prevent the evaporated water from pooling in your dessert dish.

In a separate bowl mix together the flour, sugar, egg, milk, butter, salt, baking powder, vanilla and oats. Then place cake batter over peaches.

Next, you will want to pour 1/2-2/3 cup of water into the pot, then place the trivet that came with your Instant Pot in the bottom of the pot.

Place your bake-ware dish inside your Instant Pot on top of the trivet with your tinfoil strip under the bake-ware you created and cover it with tinfoil.

Simple Homemade Hot Cocoa is JUST that, so SIMPLE to make! This recipe inspiration came from being stuck in our house due to a state wide weather warning that came true! We are up to our ears in snow and ice and hot cocoa is a must in weather like that! What do you do when you don’t have convenient store bought cocoa packets and you can’t leave your house due to weather? You make your own of course in minutes and decide that homemade hot cocoa is way better!

Since my kids were very little I have always loved to proclaim Winter as hot cocoa season. You will find us often coming in and sharing cups of cocoa together or cozying up on a Winter night, eating popcorn, sipping cocoa and watching a movie together.

Hot cocoa has become something much more than a beverage to us…it has become something linked to quality time and memory making.

Here is a video that shows you how to make your own Hot Cocoa in minutes:

When I made this Simple Homemade Hot Cocoa recipe the kids approved! All you need is some milk, sugar or sweeter and baking cocoa and a little salt.

Here is how to make your Valentine Heart Cookies-

Instructions:

Preheat the oven to 350 degrees.

Prepare the sugar cookie mix according to the instructions on the package.

Place a thin dusting of flour down on the counter, and roll out the dough to about ¼ of an inch thick.

Press the different sized cookie cutters into the rolled out batter firmly. You will need one heart of each size for each cookie that you wish to make.

Place the cut out hearts on a cookie sheet lined with parchment paper or a silicone baking mat.

Bake the cookies for 9-11 minutes, until they are cooked through and slightly browned on top.

Let the cookies cool down completely.

Starting with the largest sized heart cookie, place a layer of cake frosting on the front of the cookie.

Apply one type of Valentine colored sprinkle to the frosted cookie, and set down.

Take the next largest sized heart shaped cookie, and apply frosting to the front of it as well.

Coat that heart cookie with the next color of Valentine colored sprinkles.

Apply a dab of frosting to the bottom of the medium sized heart cookie, and press it down onto the center of the larger sized heart cookie that you already coated in sprinkles.

Take the smallest sized heart shaped cookie, and apply frosting and sprinkles to it as well.

Apply a dab of cake frosting to the back of that cookie, and press it down onto the top of the other two to finish creating your heart stacked cookie.

Repeat steps 8-14 until you have finished creating all of your cookies.

Let the frosting harden to hold the cookies together, and then serve.

I hope you enjoy this simple yet fun and delicious Valentines treat! Dovidenia. XO

This post is sponsored by Joan Of Arc Cheese but the content and opinions expressed here are my own.

Through the years of blogging, cooking and honing my cooking skills I have come to a play of joy in the simple and satisfying ways to create a delicious recipe. Today I am sharing a recipe you can throw together in minutes yet will result in a very impressive appetizer or snack! My Raspberry Citrus Brie Roll is a recipe for any skill level and will be enjoyed by all.

A goal of mine to serve YOU is to share more and more recipes that are simple, affordable and delicious so you can see that home cooking IS doable for your family! There is such reward in making something others enjoy! Also the savings that comes with cooking at home is very rewarding to the family budget. This recipe uses Joan of Arc cheese which just makes it SO delicious. You can also see my Raspberry and Brie Puff Pastry as well which is similar but with a different breading and presentation but equally delicious!

All you need to make this recipe:

Joan of Arc Brie

Croissant dough

Raspberry preserves

Orange slices

Sugar

This is how you make it! Just spread the preserves on your rolled out dough. Add slices of the cheese onto the jam and then roll up the dough with the jam and cheese inside until you have a roll.

Squeeze a small amount of your orange over he roll just enough so that as you sprinkle your sugar on top it sticks.

Put your roll in the oven at 375 degrees Fahrenheit and bake for about 20 minutes. Check regularly as your timing may vary slightly. You want your roll nice and browned. Let your Raspberry Citrus Brie Roll cool about 10 minutes before cutting to serve.

This is such a simple recipe that can be enjoyed at brunch, for dessert or even as a snack or an appetizer at a holiday celebration! I hope you enjoy it like our family does. Dovidenia. XO

Strawberries are in season and growing in many gardens this time of year. What I love about making this Simple Strawberry Shortcake Recipe is it only takes minutes to create a homemade dessert your whole family will enjoy!

What is your favorite dessert? Are you a choco-holic, love all thinks cake with lots of frosting, a pie lover or maybe cobbler is your thing? For me, strawberry desserts go as one of my top three most favorite treats! What is great about this recipe is it is also a lighter version than ones you have had before.

Ingredients for this easy strawberry shortcake recipe:

2 1/4 cup bisquick mix

2/3 cup skim milk

2 Tbsp orange zest

2 cups strawberries diced

16 Tbsp homemade whipping cream

1/4 cup powdered sugar

How to make your strawberry shortcake dessert:

Turn the oven on to 400 degrees and preheat.

Line a cookie sheet with baking sheets.

In a bowl, combine strawberries and sugar together. Set the mixture aside at room temperature until liquid starts to collect in the bottom of the bowl.

Pour the liquid into a smaller bowl, set aside. You will need 1/4 cup of juice. You can press the strawberry mixture if needed.

Meanwhile, mix together bisquick with milk and orange zest until it forms a nice cohesive dough.

Drop a ball of mixture evenly spaced on the pan at roughly 8 heaps.

Bake for 8-10 minutes until golden brown.

Once done split in half and top with strawberries, drizzle liquid and a dollop of whip cream. Enjoy!
