The good news is whether you have store bought or self grown tomatoes this Avocado Bruschetta with Basil recipe is simple and delicious.
Have YOU ever wondered how to make bruschetta? Once you have ate it I promise you will. The very pleasant surprise is with a few very common ingredients you can have a delicious appetizer or snack in just minutes! For this recipe I added avocado to the standard recipe to add a healthy fat that is delicious and also filling.
You might be thinking (if you have not ate bruchetta yet), “What is bruschetta?” I will answer your question!
What is bruschetta? The dictionary description states that bruschetta is toasted Italian bread drenched in olive oil and served typically with garlic or tomatoes.

Avocado Bruschetta with Basil
2 cups of chopped tomatoes
1 Tbsp extra virgin olive oil
1 Tbsp balsamic vinegar
6-8 basil leaves
1/2 tsp salt
1/2 tsp black pepper
1/2 lemon juice
1/3 cup onion
1/2 avocado diced
1/4 cup shredded Parmesan
1-2 Tbsp of balsamic to drizzle
Here is how to make it:
1. Chop your onions, tomato and avocado.
2. Place the avocado aside.
3. Add the onions and tomatoes to a cooking pan on low heat and toss
with olive oil.
4. Cook and toss with salt , pepper, basal mic and lemon juice for
about
5 minutes.
5. Remove from heat.
6. Toss diced avocado and fresh basil leaves
7. Serve on French bread and top with a pinch of Parmesan and more balsamic if you prefer.
