What is wonderful about this Pumpkin Cake Bar is that it serves well as a light and airy dessert or a nice treat to accompany a cup of coffee in the morning. It has the perfect amount of sweetness that it could be served as a muffin as well. Pumpkin puree is a main ingredient in this recipe that offers powerful antioxidants, fat soluble vitamins and potassium. With that being said, let’s get baking!
Simple Pumpkin Cake Bars Recipe
Pumpkin Cream Cheese Bar Ingredients
Sweetened Cream Cheese:
- 1/4 cup sugar
- 1 cup of cream cheese
- 1/2 cup milk
Pumpkin Batter:
- One box of ready to bake angel food cake mix
- 1 15 oz can of pumpkin puree
- 1/4 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1/4 tsp vanilla (optional)
Simple Pumpkin Cake Bars Recipe
- Combine together in a mixing bowl softened cream cheese, Stevia and water or almond milk. Mix until smooth. Set aside.
- Combine angel food cake mix or homemade batter, pumpkin puree, pumpkin spice, cinnamon and vanilla in a separate bowl and mix until smooth. Be sure to not over mix.
- Pour pumpkin batter mix into a lightly Pam sprayed pan. Add dollops of the cream cheese mix, Â then with a fork weave the cream cheese through out the batter in the pan to create a visual swirl effect.
4. Bake at 350 degrees for about 18-20 min or until the edges are slightly browned and the center when pricked leaves no batter residue. Remove dessert from oven and when ready to serve, do so in 2 x 2 ” size servings.
