Do you ever find yourself scrambling to make dinner on a busy week night? A busy life with a full plate can make preparing healthy meals a challenge. My BBQ Chicken Salad is a solution that provides a quick meal that offers a lot of health benefits. This is one of my personal favorite concoctions that I am excited to share!
There is no cooking talent needed for this recipe and it is simple enough even kids can pitch in and help in prep work for it.
BBQ Chicken Salad Ingredients
- Rotisserie Chicken
- Red Bell Pepper
- Corn
- Black Beans
- Shredded Cheddar
- Avocado
- Onion Straws
- Romaine Lettuce
- Garnish with Cilantro
- Your favorite Ranch & BBQ sauce
Prep:
1.Wash, dice and cut up all produce
2. Pull off 3-4 oz (palm size) chicken

3. Place produce in salad bowl and top with chicken.
4. Sprinkle in black beans, onion straws and cheese as you like.
5. Drizzle with BBQ and Ranch dressing.
*Amounts not specified. Use ingredients in the portions you prefer and eat up until full and content (wink). An intuitive tool to judge if your portions are correct is that within 3-4 hours you should feel hunger again for the next meal. Also when meal is complete you should feel content, comfortable and energized for your day.
